The application is not in the list at all
macOS only lists an application after it has asked for the permission at least once. Opening the settings first therefore means looking at a list the application cannot be in yet — and concluding the Mac is broken. Two ways out: start sharing in the application once and cancel immediately, or use the plus button below the list.
Applications
Apple menu, top left → About This Mac — It shows the name there, for example "Sequoia 15.6". From macOS 13 onwards this window looks different than before.
